Vegan Chicken Taco Salad

1 package Southwest Beyond Meat - shredded into large pieces
4 corn tortilla bowls
About 2 cups shredded lettuce
About 2 cups shredded green cabbage
2 tomatoes - diced
1 yellow bell pepper - diced
1 cup salsa
2 avocados - sliced
2 cups vegan black beans
1 cup vegan sour cream
1 cup vegan grated cheese

  1. Place lettuce and cabbage in large mixing bowl
  2. Add tomatoes, bell peppers, vegan cheese and Beyond Meat
  3. Toss salad well In bottom of the tortilla bowls, place a scoop of vegan beans
  4. Add a large scoop of salad mix
  5. Top with scoop of salsa, a few slices of avocado and a dollop of vegan sour cream
