Sesame Chicken Slaw

Elevate yourself to rock star status on the picnic and potluck circuit when you show up with this unusual, savory slaw. Lively fresh ginger and cilantro combine seamlessly into the cabbage salad with carrots, green onion and jalapeno.

Ingredients

DRESSING INGREDIENTS

  • 1 Tbs. fresh ginger, peeled and cut into quarters
  • 3 cloves garlic, peeled
  • 4 Tbs. tahini
  • 3 Tbs. mirin 1 Tbs. soy sauce
  • 1/2 tsp. black pepper
  • 2/3 cup fresh cilantro

SLAW INGREDIENTS

  • 1 package Beyond Chicken Grilled Strips, shredded 3 cups napa cabbage, shredded
  • 2 cups purple cabbage, shredded
  • 1/2 cup basil leaves, cut to thin strips
  • 3 carrots, grated
  • 1 cup daikon radish, grated 1/2 jalapeƱo, seeded and minced
  • 1/2 cup green onion, finely chopped
  • zest of one lime
  • juice of 1/2 lime
  • 2 Tbs. sesame seeds
  • 2/3 cup peanuts, chopped
Preparation
  1. Add all dressing ingredients to a food processor or powerful blender. Process until very smooth and fragrant.
  2. Toss together all slaw ingredients in a large bowl.
  3. Fold in completed sesame dressing until all veggies are coated and everything is well mixed.
  4. Serve immediately or for even more flavor, chill overnight and serve the next day.
