Monster Stuffed Shells

These stuffed shells are a fun Halloween treat for the ghouls and ghosts that haunt your home! Make them with the kids and bring the Halloween fun into the kitchen this year!

½ package jumbo shell pasta

½ onion

½ carrot

1 rib of celery

¾ cup chopped tomatoes in sauce

1 T. butter or vegan butter

1 cup Beyond Meat Beef Crumbles

Reserved tomato sauce and carrots, grated Parmesan or nutritional yeast, and olives for garnish.


Cook the jumbo shells in a large pot of boiling, salted water for 10-13 minutes to al dente. Drain and rinse in cool water. Set aside,

In a food processor, finely mince the onion, carrot and celery and cook on medium heat for 10 minutes with 1 tablespoon of butter until caramelized. Add the tomatoes and sauce and cook together for 10 more minutes. Stir in Beyond Beef and take off the heat after 3 minutes.

Lay down a layer of grated Parmesan (or Nutritional Yeast) on your serving platter to prop up the Beyond Meat Monsters. Stuff each shell with a tablespoon of filling and place standing up, repeat until your platter is full. Garnish with carrots cut into wedges as the teeth and olive slices for the eyes. Splatter some tomato sauce for effect and serve immediately.
