Cranberry Pecan Beyond Chicken Stuffed Yams

With the holidays in full swing, stuff some of those nutritious yams with our delicious Beyond Chicken Cranberry Pecan concoction. No yams? Turn it into a sandwich!

  • 3 yams or sweet potatoes
  • Salt and pepper
  • ½ package Beyond Meat Chicken Strips
  • ½ cup pecans, toasted
  • ¼ cup dried cranberries
  • 1/3 cup fresh orange juice
  • 1/3 cup pure maple syrup or agave
  • Pinch of cayenne, optional
  • 1.Preheat oven to 425°, scrub the yams and prick them with a fork. Wrap the yams in foil and bake directly on the rack for about 50-60 minutes, flipping once, until they are tender and cooked through.
  • 2.Cut the Beyond Chicken into small pieces and combine together with the pecans and cranberries. If you buy raw pecans take the time to toast them in a dry pan being careful not to burn them.
  • 3.In a separate bowl, whisk together the orange juice, maple syrup and cayenne. Pour over the chicken mixture, let everything sit together while the yams finish baking.
  • 4.When the yams are done, place one on a towel and cut it lengthwise. Use the towel to push the ends of the yam together and using a fork, mash the inside. Sprinkle both sides with salt and pepper.
  • 5.Fill the split yams with the Cranberry Pecan Beyond Chicken and enjoy.
