Chicken Thai Satay Skewers

Ingredients

1 lb Beyond Meat
1/3 cup rice vinegar
1/3 cup low sodium tamari
1/3 cup agave
½ cup water
Satay Sauce:
1/4 cup peanut butter
2 lemons juiced
1 tablespoon sriracha
2 tablespoon maple
1 tablespoon ginger
½ cup water or coconut water to blend

Preparation
  1. Soak skewers in water separately, this helps them not to burn when grilled.
  2. In mixing bowl, stir all the brine ingredients well.
  3. Place Beyond Meat product in the brine and toss well, coating all pieces.
  4. Allow strips to soak in brine for an hour at minimum over night if possible.
  5. Skewer each strip and set aside.
  6. In blender, blend all the satay sauce ingredients until smooth.
  7. Pour in small container, keep warm or room temp for service.
  8. Using a gas grill, or grill pan, place on all skewers of brined Beyond Meat and allow grill to mark. About 3-4 minutes on both sides.
  9. Once grilled, place on serving platter and lather a generous amount of satay sauce on each grilled skewer.
  10. Garnish with sprigs of cilantro, crushed peanuts, lime and thinly sliced red chili's.
