Cajun Chicken Gumbo

Laissez les bonne temps roulez! (Let the good times roll!) Spice things up with a bowl of New Orleans flavor. This soup's powerful heat will warm you from the inside, but if you like it even hotter, add more Tabasco!

  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green bell pepper, chopped
  • 1 Tbs. olive oil
  • 1 14-oz. can diced tomatoes
  • ½ cup celery, chopped
  • 1 tsp. smoked paprika
  • 2 bay leaves
  • 1 package Beyond Chicken Lightly Seasoned Strips, shredded
  • 1 tsp. vegan Worchestershire sauce (such as Annie's or Wizard)
  • 1 or 2 tsp. Creole seasoning (to taste – this can be spicy!)
  • 4 cups vegetable stock
  • 1 Tbs. fresh thyme, stripped from woody stem
  • 1 Tbs. fresh basil, minced
  • 1 Tbs. fresh parsley, minced
  • 2/3 cup sliced frozen okra salt and pepper, to taste
  • Dash Tabasco, to taste
  1. In a large soup pot over medium heat, add onion, garlic and green pepper with olive oil, sauté 2 to 3 minutes.
  2. Add canned tomatoes, juice included.
  3. Stirring often, cook until vegetables are fragrant, approximately 5 minutes.
  4. Add celery, Beyond Chicken, Worchestershire sauce, paprika, bay leaves, Creole seasoning and vegetable stock.
  5. Reduce heat to low and cover, simmering for 15 to 25 minutes.
  6. Add fresh thyme, basil and parsley as well as the okra.
  7. Season to taste with Tabasco, salt and pepper.
  8. Simmer 5 to 7 more minutes to warm okra and wilt herbs.
  9. Remove bay leaves.
  10. Serve hot with Tabasco on the side for heatseekers!
