Beyond Meat Mediterranean Bowl

Reap the benefits of a heart-healthy cuisine with this delicious Beyond Chicken power bowl! This bowl is high in protein, will fill you up while, and make you believe you had just ate beachside off the Mediterranean Sea :)

Ingredients

1 cup cooked Quinoa

¼ cup Hummus,

1 large cucumber, sliced

1 c grape tomatoes, halved

12 Chicken Strips

1 tsp. lemon juice

¼ cup red onion, sliced

Preparation
  1. Boil the quinoa and water to a medium sauce pan. Bring the mixture to a boil, reduce heat, and simmer for 10-15 minutes.
  2. Heat a ¼" of oil in a skillet (we love prefer olive oil). Cook the Beyond Meat Chicken Strips for about a minute and a half to two minutes per side.
  3. To assemble the salad, arrange the grape halves, cucumbers, quinoa and chicken in sections around the bowl.
  4. Spoon the hummus in the middle of the bowl and serve.
