Lightly Seasoned Strips

1 cup cooked Quinoa

¼ cup Hummus,

1 large cucumber, sliced

1 c grape tomatoes, halved

12 Beyond Chicken Strips

1 tsp. lemon juice

¼ cup red onion, sliced

Preparation

  1. Boil the quinoa and water in a medium sauce pan. Bring the mixture to a boil, reduce heat, and simmer for 10-15 minutes.
  2. Heat a ¼" of oil in a skillet. Cook the Beyond Meat Chicken Strips for about a minute and a half to two minutes per side.
  3. To assemble the salad, arrange the grape halves, cucumbers, quinoa and chicken in sections around the bowl.
  4. Drizzle lemon juice over the salad.
  5. Spoon the hummus in the middle of the bowl and serve.
