Beyond Chicken Winter Power Bowl

This power bowl will leave you feeling like a champion not only after you eat if but while you make it! Impress your family, friends or most importantly just yourself, and roast those veggies like a pro!

1 large sweet potatoes (sliced thinly, ¼ inch slices)

2 cups broccoli

1 tablespoon extra-virgin olive oil, divided

¼ cup halved almonds,

1/2 cup cooked quinoa

Fresh arugula

12 Beyond Chicken Strips (we used Lightly Seasoned)

  1. Preheat your oven to 400°F. Place your sliced sweet potatoes on a baking sheet, and toss with 1/2 tablespoon of extra-virgin olive oil plus salt and pepper. Roast for 20 minutes.
  2. After 20 minutes, add your broccoli florets to the same baking sheet, and toss them in the additional 1/2 tablespoon of extra-virgin olive oil. Season again with salt and pepper, and roast for an additional 10 minutes.
  3. While these are roasting, add the quinoa and water to a medium sauce pan. Bring the mixture to a boil, reduce heat, and simmer for 10-15 minutes.
  4. Heat a ¼" of oil in a skillet (we love prefer olive oil). Cook the Beyond Meat Chicken Strips for about a minute and a half to two minutes per side.
  5. In your favorite big bowl, add in some sweet potatoes, broccoli, quinoa, fresh arugula, almonds, and dress with your dressing of choice!
