Beyond Chicken Spinach Salad

This is not your basic spinach spinach salad! The combination of Beyond Chicken strips, mushrooms and caramelized onions is one of a kind and will have your taste buds wanting more! Easy to make and oh so delicious #FutureOfProtein

  • ! cup sliced mushrooms
  • ½ red onion, thinly sliced
  • ½ tsp olive oil
  • salt & pepper
  • Beyond Meat Chicken Strips
  • 3 Tbsp Balsamic Vinegar
  • 3 Tbsp extra virgin olive oil
  • ½ tsp Dijon mustard

  1. Cook the mushroom in a pan with olive oil, set aside.
  2. Caramelize the red onion in the same pan with olive oil, salt and pepper for at least 15 minutes over medium-low heat.
  3. Cut the Beyond Chicken into three pieces; pull off the larger stems of the spinach leaves.
  4. In a small bowl, measure out the balsamic vinegar and whisk in the olive oil, and Dijon mustard.
  5. Gently toss all the ingredients with Balsamic Dressing and enjoy!
