Maya Moore's Beyond Chicken Fettuccine Alfredo

One of Maya Moore's favorite winter recipes is Fettuccine Alfredo! Check out her awesome Beyond Chicken version for all your holiday dinner needs!

1 lb Fettuccine, we used brown rice

1 package Beyond Meat Lightly Seasoned chicken strips

1 cup canned coconut cream

½ - 1 cup Melt, or any other dairy-free butter alternative

¼ - ½ cup all purpose flour, we used Pamela's

1-2 cup Vegan Follow Your Heart parmesan (optional)

Pinch of salt

Fresh ground pepper

Freshly grated nutmeg


Cook the pasta as instructed on box.

On low heat, melt the "butter". Slowly add the coconut cream and whisk in ¼ cup of flour. Depending on desired thickness, you can add more flour. Also, if you choose to use "parmesan" add it into your sauce.

In a separate pan, add some butter to heat Beyond Meat chicken strips. Follow package instructions.

Drain and coat the pasta with the Alfredo sauce. Mix in Beyond Meat chicken strips. Top with more cheese, fresh ground pepper and nutmeg. Best served immediately.
