Apple Beyond Meat Stuffed Acorn Squash

The perfect dish for any Thanksgiving Day spread that will not only make your table a little brighter but will satisfy every belly in the house!

2 acorn squash

1 onion, chopped

2 apples, cubed

1 Tablespoon butter, or vegan butter

1/8 teaspoon salt

¼ teaspoon cinnamon

1 ½ Tablespoon light brown sugar

1 cup water

½ cup craisins

½ cup panko breadcrumbs

2 cups Beyond Meat Beef Crumbles

¼ cup walnut pieces

  • Preheat oven to 400 degrees. Place the acorn squash whole directly on the rack and bake for 40 minutes to an hour depending on the size until very tender. Trim the ends of the squash off and cut down the middle. Scoop out the seeds and throw away. Arrange them cut side up on your serving platter.
  • Saute the apples and onions in butter, season with salt. Add the cinnamon, brown sugar, water and cook for 15 minutes. Mix in the craisins and breadcrumbs; allow them to soak up the excess juice.
  • In a separate skillet, cook the Beyond Beef for 5-7 minutes. Add the Beyond Beef to the apple mixture and begin filling the cavity of your acorn squash.
  • Top each stuffed squash with a couple walnut pieces and extra craisins.
